Recipe: Baked Confetti Donuts

Sundays are for donuts in our house and we love all shapes, sizes, and colors. Obsessed is probably a better word to describe our love for donuts. These donuts are no exception and are the perfect excuse to use up all the leftover sprinkles from past seasons! The best part? No deep fryer required! All you need are the following ingredients and this silicone donut mat (affiliate link). Makes 6-8:

Ingredients:

  • 1 cup flour
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp nutmeg
  • 1/4 cup sugar
  • 1 tbsp brown sugar
  • 1/4 cup milk
  • 1/4 cup Greek yogurt
  • 1 large egg
  • 2 tbsp butter
  • 1 1/2 tsp vanilla
  • 1/2 cup sprinkles

Instructions:

  1. Preheat oven to 350 and spray silicone baking mat with nonstick oil.
  2. Whisk dry ingredients in small bowl
  3. Stir together wet ingredients.
  4. Fold in dry ingredients into wet ingredients until fully incorporated.
  5. Add sprinkles
  6. Spoon batter into silicone donut mat and bake for 15 minutes or until edges are golden brown.

Glaze

  • 1/4 cup milk
  • 2 cups powdered sugar
  • 1 tsp vanilla
  • Food coloring (optional)
  • Sprinkles

Stir milk, vanilla, and powdered sugar together until fully combined. Separate into three smaller bowls and add one drop of food coloring to each, and stir until fully blended. Pour over individual donuts until fully covered in glaze and top with sprinkles of your choice.
